Blueberry Butter Swim Biscuits
Fluffy, buttery biscuits packed with jammy blueberries
Ingredients
- ½ cup (1 stick) unsalted butter
- 2 cups all-purpose flour
- 3 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp lemon zest
- ½ tsp salt & ½ tsp baking soda
- 1 ½ cups buttermilk
- 1 cup fresh blueberries
- 1 tbsp brown sugar
Instructions
- Place butter in an 8-inch square baking dish. Put it in the oven and preheat to 425°F, letting the butter melt as it heats.
- Whisk flour, granulated sugar, baking powder, lemon zest, salt, and baking soda together.
- Once combined, stir in the buttermilk.
- Carefully remove the hot pan from the oven.
- Ladle 4 tbsp of the melted butter from the pan into the dough, leaving the rest in the dish.
- Stir the dough, then fold in the blueberries.
- Spread dough evenly into the buttered dish, top with brown sugar, and bake at 425°F for 25 minutes until golden.
- Let rest for 5 minutes to absorb the butter, then slice.
