Blueberry Butter Swim Biscuits

Fluffy, buttery biscuits packed with jammy blueberries

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp lemon zest
  • ½ tsp salt & ½ tsp baking soda
  • 1 ½ cups buttermilk
  • 1 cup fresh blueberries
  • 1 tbsp brown sugar

Instructions

  1. Place butter in an 8-inch square baking dish. Put it in the oven and preheat to 425°F, letting the butter melt as it heats.
  2. Whisk flour, granulated sugar, baking powder, lemon zest, salt, and baking soda together. 
  3. Once combined, stir in the buttermilk.
  4. Carefully remove the hot pan from the oven. 
  5. Ladle 4 tbsp of the melted butter from the pan into the dough, leaving the rest in the dish. 
  6. Stir the dough, then fold in the blueberries.
  7. Spread dough evenly into the buttered dish, top with brown sugar, and bake at 425°F for 25 minutes until golden. 
  8. Let rest for 5 minutes to absorb the butter, then slice.
