Blueberry Refrigerator Jam

Ingredients
- 5 cups fresh blueberries
- 1 ½ cups white sugar
- 3 lemons
Instructions
- Prep:
- Zest 1 lemon and juice all 3 lemons
- Place a small plate in the freezer.
- In a deep saucepan, mash 2 cups of the blueberries. Stir in the remaining whole berries, sugar, (around 5 TBS) lemon juice, and zest.
- Boil:
- Bring to a vigorous boil over medium-high heat.
- Once bubbling heavily (so bubbles don’t disappear when stirred), cook for 12 minutes, stirring frequently.
- Test:
- Retrieve the cold plate from the freezer. Drop a spoonful of jam onto the cold plate. Run your finger through it; if it wrinkles and holds its shape, it’s done. If runny, boil 1–2 minutes longer and re-test.
- Store:
- Remove from heat, pour into jars, and let cool for 2 hours.
- Store in the fridge for up to 2 weeks.
