How to Freeze Blackberries
Flash-freezing your fresh blackberries ensures they stay loose and scoopable rather than freezing into a solid block.
Shelf Life: 6–12 months
Simple Steps
- Clean & Sort: Discard any stems or mushy fruit, then gently rinse the berries in a colander.
- Dry Thoroughly: Pat the berries completely dry with towels. Any leftover water will create ice crystals and cause clumping.
- Flash Freeze: Spread the berries in a single layer on a parchment-lined baking sheet, making sure they don’t touch. Freeze for 2 to 4 hours until rock solid.
- Store: Transfer to labeled, airtight freezer bags. Squeeze out excess air to prevent freezer burn and store.
Tips
- Sugar-Pack Option: For better color and texture in future baking, toss 1 quart of berries with ¾ cup of sugar before freezing.
- Airtight is Key: Always use heavy-duty, freezer-safe bags to maximize their shelf life.
