Blackberry Crumble Bars
Wholesome, naturally sweetened bars filled with juicy blackberries—perfect for a quick breakfast or snack.
Ingredients
Filling:
- 2 ½ cups blackberries (can sub for raspberries)
- 3 tbsp maple syrup
- 2 tbsp cornstarch
- 1 tsp lemon zest
- ¼ cup water
Crust & Crumble:
- 1 ½ cups old-fashioned rolled oats
- 1 cup white whole-wheat flour (or all-purpose flour)
- ¾ cup coconut sugar
- ¾ tsp kosher salt
- 5 tbsp unsalted butter, melted
- 3 tbsp olive oil
- 1 tsp vanilla extract
Instructions
- Combine blackberries, maple syrup, cornstarch, and water in a saucepan over medium heat.
- Bring to a low boil, mashing the berries, and simmer for 5 minutes until thick.
- Stir in lemon zest and set aside.
- Preheat oven to 350°F. Line an 11×7-inch pan with parchment paper and grease with cooking spray.
- Mix oats, flour, coconut sugar, and salt in a bowl.
- Blend in the butter, oil, and vanilla with your hands until it looks like coarse sand.
- Set aside ⅔ cup for the topping.
- Press the remaining oat mixture firmly into the bottom of the pan.
- Spread the blackberry filling over the crust, then scatter the reserved crumble on top.
- Bake at 350°F for 35 minutes until lightly browned.
- Cool completely on a wire rack before slicing into 12 squares.
- Store airtight for up to 4 days.
