The Salad
- 4 cups baby spinach
- 2 cups fresh blueberries (or 1 cup dried blueberries)
- 1 cup Broccoli
- 1 cup raw walnuts (sub sunflower seeds for a nut-free option)
- 1 medium-large avocado, chunked
- ½ cup goat cheese, crumbled
- Salt and black pepper, to taste
The Balsamic Vinaigrette
- ¼ cup olive oil
- 2 tbsp balsamic vinegar
- ½ lemon, juiced
- 1 tsp garlic powder (or 2 fresh cloves, minced)
- 1 tsp honey
- Salt and black pepper, to taste
Step-by-Step Instructions
1. Mix the Dressing
