Blackberry Avocado Salad
A vibrant, crisp salad featuring creamy avocado, sweet blackberries, and a zesty lemon dressing.
Ingredients
- Salad:
- 4 cups mixed greens
- 2 sliced avocados
- 2 cups blackberries
- ½ sliced red onion
- ½ cup pecans
- ½ cup crumbled goat cheese
- Fresh thyme (garnish)
- Dressing:
- 3 tbsp lemon juice
- 6 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and Pepper (to taste)
Instructions
- Prep:
- Wash and dry the greens and blackberries.
- Slice the avocado and red onion.
- Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant; let cool.
- Whisk Dressing:
- Combine lemon juice, olive oil, Dijon, and honey in a small bowl.
- Season with salt and pepper.
- Assemble Salad:
- Layer greens, avocado, blackberries, red onion, pecans, and goat cheese on a platter.
- Toss:
- Drizzle with dressing, toss gently, and garnish with thyme.
- Serve immediately.
