Blackberry Cobbler
Ingredients
Filling:
- 2 cups blackberries
- ½ cup sugar
- ½ – ¾ cup water
Batter:
- 1 cup self-rising flour
- 1 cup white sugar
- 1 cup buttermilk
- ½ stick butter
- 1 tsp vanilla
Instructions
- Filling:
- Boil blackberries, sugar, and water in a 2 quart saucepan or boiler for 3–5 minutes until tender (not mushy).
- Remove from heat.
- Mix Batter:
- Melt the butter directly in your baking dish in the oven.
- In a separate bowl, stir the flour, 1 cup sugar, buttermilk, and vanilla until just combined (it will be slightly thicker than cake batter).
- Assemble:
- Pour the batter into the dish over the melted butter.
- Spoon the fruit and syrup evenly on top. Do not stir.
- Bake:
- Bake uncovered at 350°F for 35 – 45 minutes until golden.
- Serve warm with ice cream!
