How to Dry Strawberries

Ingredients:

  • 1 lb Fresh Strawberries (or desired amount)
  • Optional: 1 tsp Lemon Juice (to prevent browning)

Equipment:

  • Baking sheet
  • Parchment paper
  • Sharp knife or mandoline slicer
  • Airtight container for storage

Instructions:

  1. Prep: Preheat your oven to its lowest temperature (ideally 170°F, but no higher than 200°F). Wash, thoroughly dry, and remove the stems from the strawberries.
  2. Slice: Slice the berries into consistent pieces, aiming for a thickness between 1/8 to 1/4 inch. (Thinner slices result in crispier chips, while thicker slices will be chewier.)
  3. Prevent Browning (Optional): If desired, gently toss the strawberry slices with a little lemon juice.
  4. Arrange: Lay the slices in a single layer on a baking sheet lined with parchment paper. Ensure none of the slices are overlapping.
  5. Dry: Bake for 2 to 4 hours, turning the slices over halfway through the drying process to ensure even drying.
  6. Maintain Airflow: Occasionally open the oven door during baking to allow moisture to escape.
  7. Check for Doneness: The strawberries are finished when they feel dry, leathery, and pliable. They should not be sticky.
  8. Cool & Store: Turn off the oven and let the dried strawberries cool completely on the baking sheet. Once cooled, store them in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for up to 1 month.

Tips for Success:

  • Low Heat is Key: Using the absolute lowest temperature setting on your oven prevents the strawberries from cooking instead of simply drying out.
  • Consistency Matters: Uniformly sized slices ensure all pieces finish drying at the same time.

  1. Prep the Strawberries: Wash the strawberries, remove the stems (hull them), and slice them into thin pieces, about 1/8 to 1/4 inch thick. Gently pat the slices dry with a paper towel to remove any excess moisture.
  2. Optional Sweetening: For a sweeter, “candy-like” snack, lightly dust the strawberry slices with sugar or cinnamon before dehydrating.
  3. Arrange in Air Fryer: Place the strawberry slices in a single layer in the air fryer basket. Ensure the pieces do not overlap, as airflow is crucial for proper dehydration. (You may use parchment paper to prevent sticking).
  4. Dehydrate: Set the air fryer to its lowest possible temperature, ideally 130°F–135°F, using the “Dehydrate” setting if available.
  5. Cook Time: Cook for 3–6 hours. The total time will depend on the thickness of the slices and your specific machine. Work in batches if necessary to avoid overcrowding.
  6. Check for Doneness: Begin checking the strawberries after 3 hours to prevent burning. The dehydrated strawberries are done when they have a leathery or slightly crispy texture.
  7. Cool and Store: Let the dehydrated strawberries cool completely to room temperature before transferring them to an airtight container.
