Spinach Blueberry Salad

This refreshing summer salad features a delightful mix of sweet, savory, and creamy textures, perfectly tied together with a bright, homemade balsamic dressing.

Ingredients


The Salad

  • 4 cups baby spinach
  • 2 cups fresh blueberries (or 1 cup dried blueberries)
  • 1 cup Broccoli
  • 1 cup raw walnuts (sub sunflower seeds for a nut-free option)
  • 1 medium-large avocado, chunked
  • ½ cup goat cheese, crumbled
  • Salt and black pepper, to taste

The Balsamic Vinaigrette

  • ¼ cup olive oil
  • 2 tbsp balsamic vinegar
  • ½ lemon, juiced
  • 1 tsp garlic powder (or 2 fresh cloves, minced)
  • 1 tsp honey
  • Salt and black pepper, to taste

Step-by-Step Instructions


1. Mix the Dressing

In a small bowl or jar, combine the olive oil, balsamic vinegar, lemon juice, garlic powder, and honey. Season with a pinch of salt and pepper, then whisk or shake vigorously until the vinaigrette is completely emulsified.

2. Assemble the Salad

Layer the baby spinach, fresh blueberries, walnuts, avocado chunks, crumbled goat cheese, and torn mint leaves into a large serving bowl or onto a platter. Season lightly with salt and pepper.

3. Dress & Serve

Pour the prepared balsamic vinaigrette evenly over the top. Gently toss the ingredients together so everything is beautifully coated, then serve immediately.
